Shitake Mushroom & Pear Spring Rolls




For the filling

Ingredients
½ cup
Spring onions chopped fine
 1 teaspoon
Ginger chopped fine 
1 teaspoon
Garlic chopped fine 
½ cup
Carrots fine strips   
1 cup
USA Pears fine strips 
2 each
Shitake mushrooms finely chopped  
1 teaspoon
Soy sauce 
½ teaspoon
Rice wine vinegar 
Vegetable oil  for frying
1 teaspoon
Olive oil light  
Spring roll sheets or wanton sheets

 Method


·         In a hot pan saute the vegetable for 1 minute.
·         Season with soy sauce, rice vinegar, salt, pepper. Set aside to cool.
·         Lay down the spring roll sheets, lay a bit of the filling on the sheet (on the side closer to you) fold the wrapper from the sides to close and then roll into a cigar shape.
·         Deep fry or bake in the oven until golden brown and crispy .Serve with red chilli Chinese sauce

Apple Cinnamon Yogurt Muffins

















These muffins are great for breakfast on-the-go or as a mid-day snack. The Brae burn apples add a rich, sweet-tart, spicy flavor that delivers high-impact in taste and nutrition. 


3 cups                          all-purpose flour                                            750 mL
1-3/4 cups                   sugar                                                               425 mL
3-1/2 tsp                      baking powder                                               17 mL
1/2 tsp                         salt                                                                  2 mL
1/2 tsp                         grated orange zest                                         2 mL
1/4 tsp                         ground nutmeg                                              1 mL
1 cup                           butter or margarine                                       250 mL
1 cup                           peeled, cored and grated
Washington         250 mL

Braeburn or Golden Delicious apple


 
Pre-heat oven to 350 F (180 C)

Method:

  • Grease 24 3-inch (7.5-cm) muffin pan cups or line with paper liners.
  • In large bowl, combine flour, 1 cup sugar, baking powder, salt, orange zest and nutmeg. With pastry blender or fork, cut in 3/4 cup (175 mL) butter until mixture is crumbly.
  • In medium bowl combine apple, yogurt and eggs.
  • Add to flour mixture, stirring until just combined. 
  • Spoon batter into prepared muffin cups and bake 20 to 25 minutes or until centers spring back when gently pressed.
  • Cool muffins in pan 5 minutes.Remove from pan and cool until able to handle.
  • Meanwhile, melt remaining butter.
  • In small bowl, combine remaining 3/4 cup sugar and cinnamon.
To serve, brush tops of muffins with butter and roll top in cinnamon-sugar mixture.

Sesame Apple Salad



This fresh, light-tasting salad has a mildly nutty flavor with a hint of mint that complements the super sweetness of the Fuji apple. Top with grilled chicken for a complete meal.

For the salad, you would need:

2 Washington Fuji apples                                                                  
2 medium carrots    
1bunch small radishes                                                                      
1/2 cup golden raisins
1/2 chopped fresh parsley                                                              
1/2 cup chopped fresh mint


Dressing:

1/4 cup                      cider vinegar                                                     50 mL
2 tbsp                        honey                                                                 30 mL
1 tsp                          Dijon mustard                                                   5 mL
                                  Salt and pepper to taste
3/4 cup                      extra virgin olive oil                                         175 mL
2 tbsp                        sesame seeds, toasted                                       30 mL

Method:

  • Quarter apples; remove core and thinly slice. Set aside in large bowl
  • Peel carrots and cut into matchstick pieces. Add to apples.
  • Slice radishes and cut into thin strips. Add to apples. 
  • Gently toss with raisins, parsley and mint.
  • In small bowl, whisk together, vinegar, honey, Dijon, salt and pepper. Slowly whisk in oil.
  • Just before serving, toss salad with dressing and sprinkle with sesame seeds.
